In the Chronicle: Spicy Shredded Chicken



Shredded chicken...how many recipes can I come up with for this versatile item?

Turns out the answer is: A Lot! And they are all prepared in the slow cooker, while I'm at work or doing something else.

Or shredded beef or pork. I've run loads of great recipes because, well, I love a juicy sandwich of succulent shredded meat or a good tortilla wrap, burrito or taco.

This week's recipe can be as spicy or as mild as you like. I usually use two jalapeno peppers, and the result isn't over-the-top hot. However, you can use mild or fruity salsa and omit the jalapenos for a very mild dish.

What to do with the Spicy Shredded Chicken? Wrap it in a tortilla. Serve it as a topping for a taco salad. Put it on a bun. Any way you use it, I think you'll love how easy it is to prepare and how flavorful it is.
