In the Chronicle: Slow Cooker Cheesy Corn Chowder
I posted a while back that I've developed a ton of recipes for corn chowder. Well, I'm at it again!
This week's recipe in The Augusta Chronicle is a delicious corn chowder that cooks up in your slow cooker. It's thick and creamy and cheesy. And, it has a secret ingredient that makes it beyond luscious: Cream cheese.
I use reduced-fat cream cheese in the recipe. It melts as the chowder cooks, but if it isn't all the way melted when you're ready to serve your chowder, just give everything a good stir and it'll break up and incorporate right into the chowder.
This recipe makes a ton, and I developed it for use in a six-quart slow cooker. If you have a smaller slow cooker, just cut the recipe in half.
