Everyone is home from college, so we've been feeding a crowd. Favorite son invited two friends and his girlfriend over for dinner the other evening, and favorite daughter invited friends as well. I'm thinking that is the way it is going to be over the next few weeks, so I'll be cooking a lot!
Here's what's on the menu. First, I'm making Chicken Paprikash with a big pack of chicken thighs I have in the freezer. I'll make extra sauce and dumplings in case we end up with extra young adults.
Simple Sunday Gravy makes a ton of delicious, meaty Italian red sauce, so it'll be on the menu as well. It simmers all day in the slow cooker, so it'll free me up for last-minute holiday shopping and baking.
Deep Dish Pizza serves six to eight normal eaters, but about 4 or 5 20-something young men. In other words, I may be making two of these!
I might make Jeannine's Tortilla Pie, which is always a hit with my young adults. (It feels strange to have "young adults," but what else do you call kids in their early 20s?)
Friday night, my dad is in charge of the meal, and he's making Baked Ziti. He uses the recipe from Cook's Illustrated magazine and it's the perfect meal since my niece is a vegetarian.
Last, I've got some Chunky Slow Cooker Chili in the freezer that I'll pull out for dinner on the weekend. I'm stashing a couple of cans of chili beans to add to the chili just in case we end up with more "young adults" than I anticipate. And, I'm also going to make some vegetarian chili for my niece.
