This week's Chronicle Column: Broccoli Raab and Sausage Lasagna

I absolutely love broccoli raab...could eat it practically every day. The slightly bitter, peppery bite is so good! If you like arugula, I think you'll love this vegetable (if you haven't already discovered it).

This week my favorite vegetable is combined with Italian sausage in a creamy Parmesan sauce that's layered with no-bake lasagna noodles and mozzarella cheese.

When picking a bunch of broccoli raab (also labeled rapini), look for bright green leaves with small broccoli-like florets. This isn't actually a member of the broccoli family, but of the turnip family.

If you're not a broccoli raab fan, I made a spinach version of this same recipe for my vegetarian niece. Just substitute two 10-ounce packages of chopped frozen spinach (defrost and squeeze as much of the liquid out as possible). Also, regular steamed broccoli can also replace the broccoli raab.
