This Week in the Chronicle: Chicken and Wild Rice Salad
This week's Chronicle column features a simple rice salad that starts with a package of Uncle Ben's Original Recipe Wild and White Rice Mix.
I've played around with this packaged rice mix for years, creating not only salads, but casseroles and soups that benefit from the flavor of the "secret" seasonings that come with the mix.
This recipe features a little kick of curry, sweet sliced red grapes and salty, crunchy cashews. I like to make some on a Sunday afternoon for Hubs and I to take for lunch at the office. It's also a great recipe to prepare for a large group or to take to a covered dish dinner.
