This week's Chronicle recipe: Chicken Panzanella Casserole


This recipe may sound strange...I mean a dish composed of bagged garlic croutons, spaghetti sauce and chicken isn't your every day meal.

But trust me here. This is good. The spaghetti sauce absorbs into the croutons, so they get moist and soft. If you've ever had one of those "bubble up pizza" casseroles, it is a bit similar, and I really think this would be good with pepperoni or browned Italian sausage in place of the chicken.
